Freeze-dried Fruits
Freeze-dried fruits such as apple or
kiwi pieces and strawberry pieces are a lot more expensive than the
air-dried variant, but they can also be employed in smaller doses due
to their lower weight.
Freshly harvested, the raw
material is frozen and freeze-dried in vacuum chambers. Hereby, the ice
is directly turned into steam via a slow heating process and extracted
from the cells. Form, colour, size and consistency remain unchanged,
and the opened cell structures allow a quick immersion in water.
This
process is especially favourable to all ingredients such as vitamines,
minerals and aromas. No additives are used so that the outer appearance
and a natural taste are optimally preserved. The fruit tastes as good
as the original!
