White Tea
The Pai Mu Tan is the
most popular variety of this type. This tea is a large leaved,
especially fermented tea which is also known as white tea. The leave
tips are shimmering silvery-white and yield a very light infusion. The
taste of this speciality is very mild and pleasantly aromatic.
Production process of white tea:
Plucking by hand, only the unopened buds are used.
Steaming and pre-withering in the open air.
Rolling via careful shaking of the baskets in order to break open the leaf ridges.
Drying below a basket holder with charcoal where the buds are slowly opening.
A lot of experience is needed to produce a soft, pleasantly fragrant white tea.
